Ranting...

This is a rant blog...Have you ever wanted to just run away and not tell anyone where you are at? That's the way I've been feeling lately! I'm to the point to where I don't feel happy anymore with where I'm at in life. I feel miserable and it doesn't seem to be getting better. I just want to be alone and have peace and quiet! There is always someone at my house and its never quiet anymore. Babies crying, kids screaming, people arguing over stupid stuff, etc. I just want to scream! Seems like all I want to do is cry anymore. I'm always so tired and don't want to do anything anymore. I wanna lay in bed in the dark with the blanket over my head and cry! Whats wrong with me? I ask myself that all the time! I really dont know whats wrong. I used to be the bubbly Justin and was always laughing and cutting up. I still do those things but now I just do it to hide behind all this crap. I just dont know what to do anymore. I'm calling for help but it seems like one of those nightmares you have where someone is trying to kill you and you can see yourself screaming but nothing is coming out and no one can hear you. ugh! i hate this feeling so much. and on top of all this i have feelings for someone who definitely doesnt have feelings for me and so im trying to deal with that and its hard! if you read in my earlier blog about "J" then you will know what im talking about! ugh!!! what do i do? i just want to run away and never come back. almost like julia roberts in sleeping with the enemy! she just moves across the US, changes her name and appearance and no one knows who she is. im done ranting for the moment...

holidays...

Sorry it's been a while since I posted a blog I've just been crazy busy! Let's go back to Christmas! Christmas was pretty good this year. I made tons and tons of desserts and everyone loved them! It wasn't the same though without the person you love sitting next to you opening gifts with your family. As many of you know this is my first year alone for the holidays. My partner and I called it quits during the summer. So it was different not having someone during the holidays. Yes I had my family but it wasn't the same. It was like one of those moments where everyone is sitting around having a good time and suddenly all noise just disappears and you start to realize that you are hiding under your fake smile. Hopefully things will get better soon. But over all it was a good Christmas.

I will tell you about my new year's later tonight when I'm alone because it seems to bring out the tears in me ...

Recipe #2




I've been baking like crazy today! Btw, thats my little sister's hand trying to steal the cookies!!This time I decided to test White Chip Chocolate Cookies except I deleted a couple ingredients and added my own in order to make White Chocolate Chip Macadamia Nut Cookies! This recipe calls for Cocoa Powder which I omitted! Also this recipe calls for 2 cups white chocolate morsels, if you like white chocolate then use the 2 cups but I think it was a little to much chocolate but thats my opinion. Also I decided to add 1/2 cup chopped macadamia nuts! Recipe below:




White Chip Chocolate Cookies (White Chocolate Chip Macadamia Nut Cookies)




2 1/4 cup All-Purpose Flour


2/3 cup Baking Cocoa (I omitted this ingredient)


1 tsp. Baking Soda


1/4 tsp. Salt


1 cup (2 sticks) softened butter


3/4 cup Sugar


2/3 cup Brown Sugar, packed


2 eggs


2 cups White Chocolate Morsels


1/2 cup Macadamia Nuts, chopped (I added this ingredient)




Preheat oven to 350F. Combine flour, cocoa (omitted), baking soda and salt in a small bowl, set aside. In another bowl, mix butter, sugars, and vanilla until creamy. Add eggs one at a time. Gradually add flour mixture. Stir in morsels and nuts (added). Drop round tablespoon balls on a ungreased cooking sheet. Bake 9 to 11 minutes. Makes about 4 dozen.


Recipe #1


I decided to try Paula Deen's Monster Cookie recipe! This recipe is very easy! Anyone can do it! This recipe calls for raisins which can be optional. I made 2 recipes of these cookies one with raisins and one with not. The recipe without raisins I decided to add 1/2 cup coconut flakes! Absolutely divine!! Recipe below:
Monster Cookies
Ingredients
3 eggs
1 1/4 cups packed light brown sugar
1 cup granulated sugar
1/2 teaspoon salt
1/2 teaspoon vanilla extract
1 12-ounce jar creamy peanut butter
1 stick butter, softened
1/2 cup multi-colored chocolate candies
1/2 cup chocolate chips
1/4 cup raisins, optional
2 teaspoons baking soda
4 1/2 cups quick-cooking oatmeal (not instant)
1/2 cup coconut flake (Justin's addition, optional)
Directions
Preheat the oven to 350 degrees F. Line cookie sheets with parchment paper or nonstick baking mats. In a very large mixing bowl, combine the eggs and sugars. Mix well. Add the salt, vanilla, peanut butter, and butter. Mix well. Stir in the chocolate candies, chocolate chips, raisins, if using, baking soda, and oatmeal. Drop by tablespoons 2 inches apart onto the prepared cookie sheets. Bake for 8 to 10 minutes. Do not overbake. Let stand for about 3 minutes before transferring to wire racks to cool.

I went out a couple nights ago with some friends and we decided to go eat at a local Italian restaurant and it was to die for! but i felt that i could do better myself so i did! one of our appetizers was deep fried ravioli with a marinara sauce...they were very good but i totally beat them! i decicded to make a spinach and cheese ravioli with a marinara sauce...so take a look!

I was definitely impressed with myself lol...ill be back bloggers! until next time...

Justin and Julia...

So over the weekend I decided to rent Julie and Julia and test some new recipes for Christmas! I had so much fun ! I never thought being alone watching a movie and cooking Christmas cookies and candies would be so much fun by yourself lol...anywho the movie was fantastic! once again meryl streep blew the roll of julia child out of the water. i remember watching julia child as a kid and she was so funny. meryl has received golden globes noms for playing the roll of julia child! way to go! can you imagine going through over 500 recipes daily for a year? amazing! i have made the boeuf bourguignon and its fabulous! pretty pricey to make though but well worth it. so like i was saying ...as i was watching this movie i was testing new recipes for Christmas...i made 12 dozen cookies including chocolate chip, white chocolate, peanut butter, snickerdoodles, etc etc, 12 lbs of fudge (thanks kendra once again for that divine recipe) also including peanut butter, chocolate/white chocolate swirl, etc etc and a triple layer carrot cake! now i have all the sweet recipes i want to make this weekend im going to try some appetizer recipes! any good ideas let me know! ok im done for right this second...until next time !
